A surprising tasting menu that is innovative and at the same time intense and aromatic. That takes advantage of local products to combine tradition and innovation. That is the key to the tasting menu created by Gerhard Schwaiger, chef of the Schwaiger Xino’s restaurant, which in just 5 menus is capable of all this and more.
One of the key things is that the menu is updated periodically, so for a limited time diner’s have the opportunity to put themselves in the hands of the chef to try his delicious creations, but they will not always be there for our palates.
In this tasting menu the dishes are not repeated with the exception of “Stilton cheese marinated in aged port with fig mustard and walnut bread”. An explosion of flavour that delights everyone who tries it and has made it a classic.
Treats for the senses such as “Organic salmon marinated with beetroot on leek salad, summer truffle and vichyssoise”; an explosion of flavour with the “Chanterelles a la nage with spinach puntalette risotto”; a local product with the “Carré of lamb with crispy polenta, roasted garlic, shallots and port sauce”; an exquisite dessert of “Peach granita with passion fruit curd and vanilla ice cream” and, of course, Stilton Cheese, will make this meal an unforgettable pleasure for only 60 euros (55 euros without the cheese) and that you can only try at Schwaiger Xino’s.
