The Chefs

Stefan Brunner
With experience in kitchens in Austria, England and Mallorca, he brings a modern vision that blends creativity and tradition, shaped by the Central European influences of his native Austria. After two years working with Gerhard Schwaiger and Cristina Pérez at Restaurant Tristán, he joined the Schwaiger Xino’s project from the outset. Today, he leads the restaurant’s kitchen, preserving the essence of Schwaiger’s signature dishes while introducing new, Mediterranean-inspired creations.

Florian Mittelsdorf
He began his career in 2006 in classically styled kitchens and soon discovered a passion for pâtisserie. In 2015 he moved to Mallorca and first worked alongside Stefan at Restaurant Tristán, which sparked his interest in Spanish and Mediterranean cuisine. After gaining experience in several of the island’s kitchens, he joined Schwaiger Xino’s, where he contributes his expertise and creativity both in the pastry section and to the overall culinary offering.
